Sage Hot Italian Sausge Pasta

Indgredients
- 10 oz Hot Italian Port Sausage
- 1 bunch sage
- 1 shallot
- 1/4 cup cream
- 1/4 cup grated parmesan
- 6 oz kale
- 1 tpbsp rice vinegar
Directions
- Boild 3/4 pot salted water
- pick sage leaves
- seperate kale, roughly chop
- peel/thinly slice shallot
- Fry sage in 2 tsp olive oil. medium high heat. 1-2 min. Leave oil.
- Cook sausage 3-4 minutes.
- Start pasta. 10-12 minutes reserve 1/2 cup pasta water.
- add chopped kale, shallot, 4-5 minutes
- Add vinegar and cream. 30secs - 1 minute. turn off heat till pasta ready
- combine pasta and half reserved water in pan. Cook medium high 1-2 minutes
- Finish with Sage leaves and cheese.
