Ingredients

  • 3 Tbsp balsamic vinegar
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp soy sauce
  • 1 Tbsp brown sugar or molasses
  • 1 Tbsp olive oil
  • 2 tsp Cajun seasoning (adjust to your heat preference)
  • 1 tsp unsweetened cocoa powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika (optional, for extra smoke)
  • 1 garlic clove, minced or smashed

Optional Enhancements

  • ½ tsp Dijon mustard – adds tang and emulsifies the marinade
  • 1 Tbsp lime or orange juice – brightens and balances

Instructions

  1. Combine all ingredients in a bowl or zip-top bag.
  2. Add 1½–2 lbs flank steak and coat well. Press out the air if using a bag.
  3. Marinate in the refrigerator for 4 to 12 hours.
  4. Remove from marinade, pat dry, and bring to room temp for ~20 minutes before cooking.
  5. Grill over high heat or sear in cast iron until 125–130°F internal (about 4–5 minutes per side).
  6. Rest 5–10 minutes, then slice thinly against the grain.
